In 2013 Alexa's body went into septic shock and induced her into a medical-coma. The doctors gave her a one-percent chance of living. Alexa's near-death experience brought on a string of health issues including being diagnosed with severe Ulcerative Colitis. When no doctor could help her, she turned to food to help heal her body. Alexa enrolled in the Institute of Integrative Nutrition and became a Certified Holistic Health Coach.
For a full year Alexa was too weak to even leave her house, let alone go walk her dog. She was still that passionate entrepreneur so during the time spent at home, she started turning her favorite recipes into healthier, SIMPLER versions that were Gluten-Free and Vegan. While suffering with severe symptoms from her autoimmune disease, Alexa decided to try and turn the negative (of being stuck at home feeling extremely isolated) into something positive, and wrote her first book, "The Simple Gluten-Free Vegan Cookbook".
The idea for this cookbook sprouted when she couldn't find any recipes that were gluten-free and vegan and didn't require a ton of hours in the kitchen or so many expensive ingredients. She sold thousands of copies before it even published as her story was inspiring people from all over the world who also suffered from digestive disorders, while also catering to busy people who want a homemade healthy meal that doesn't take hours of prep and so many expensive ingredients.
